This was my breakfast today. I would like to say that it all came from our gardens and chickens but no. The onions and kale came from our gardens but the chickens are on sabbatical, so right now we're enduring store bought. So sad!
But I want to chat about the kale. I love kale! And our kale plants grew magnificently this year. I had 9 plants and although I did my best to eat as much kale as I could fresh, there was just too much of it. And so, I froze it! I blanched it and then froze it in 2 cup servings. So now when I get a hankering, I pull out a bag and put it in the pan with some onions and let it cook a bit. Then I add an egg and I have a very filling breakfast! I love eating from our harvest. There's just something so satisfying about it!
