Making BBQ Sauce

I found this great recipe for Almost-Sweet-Baby-Ray's BBQ sauce on a  number of vlogs that I subscribe to. I will be honest and say that when I canned it I thought it looked a little runny but when I opened one today to pour over some chicken legs it was perfect. I am going to give you my adjusted recipe because I thought it was a little heavy on the molasses. Are you ready for this awesome treat that you can have on your shelves?

BBQ Sauce

4 cups catsup
3 cups brown sugar (you're supposed to use dark brown but I forgot and used light)
1 1/4 cup molasses
1 cup apple cider vinegar or pineapple juice (whatever you have on hand)
3/4 cup water
3 Tbls Worcestershire
4 Tbls ground mustard
3 Tbls smoked paprika
2 tsp granulated garlic
2 tsp chili powder
1 Tbls canning salt
1 Tbls black pepper

Heat all ingredients on medium and whisk it all together. Bring to a light boil then simmer while you get your pressure canner ready. Pour into pint jars and I canned for 20 minutes at 15 pounds pressure. It all depends on where you live.

Gotta love this boy!

We had so much fun having Zach home for Christmas and we look forward to more visits from this boy! He's a keeper for sure!

I want to share this recipe that I got from Freedom Homestead. Tangi is the host and she's also the one who provided me with the best bread recipe to use with my new Pullman bread pans. It's basically been full proof! So this next one is a recipe using leftover mashed potatoes. And who doesn't have leftover mashed potatoes? I made shepherds pie yesterday and deliberately made extra potatoes. So here goes.

Potato Cakes

2 cups leftover mashed potatoes
2 eggs
1/2 c. flour
1/2 tsp. baking powder
salt and pepper to taste

Mix all ingredients and then add about 1/4 cup milk or until you have it to the consistency of cornbread batter. Drop it on a hot griddle and flatten it out a bit. Cook about one minute and then flip. Cook until done! Enjoy!
