A Very Busy Saturday!


I want to share with you all what my Saturday was like! It was crazy busy, just the way I like it. 


Using some zucchini from last year's haul and adding in a zucchini from our raised beds out back I made some zucchini bread!  I used the recipe from Sarah of Living Traditions Homestead which takes 5 cups of zucchini and makes 2 loaves. I had already cut into the other loaf to try it and it's excellent!


I also hard boiled 10 eggs in the Instant Pot! I use the 5-5-5 method where you cook them for 5 minutes, let it depressurize for 5 minutes and then let them sit in a bowl of ice water for 5 minutes. They are the easiest eggs to peel when you do this!


I also made granola from a magazine recipe that we have used for many, many years. I didn't have any coconut so I made do with what we had. It's still delicious!


I also made some mini banana muffins using up some very soft bananas. I cannot believe I forgot to put a little handful of chocolate chips but they are still excellent!



And this apron idea is from the Ritzville County Fair that we went to. Isn't that the greatest idea for using up old shirts? We love these smaller county fairs since we began our own personal boycott of our city's big fair that is so commercialized.

It was a day filled with work and fun all rolled together! I also want to add that I spent grocery money on Saturday. I bought more bananas, some salad (until our lettuce and spinach come in), coconut and yeast. All together less than $20.00. I'm still trying to use up what we have here in the house. 

Last night for dinner we had tacos, jojo's, and corn on the cob. I made corn tortillas using my crepe maker, the jojo's were from last year's potatoes and I wanted to use them up, and the corn was from our garden and it was excellent. 

So there's my Saturday list of what I did to save money! How are you all doing?
